I almost fell asleep on the drive to work, so I thought I'd have some coffee. That was a 2pm. It is now 10:43PM.
I'm just sayin'.
Anyway, Luna's post reminds me of a great dessert when you are overflowing with berries in the summer. Works well with frozen berries and probably any other fruit, for that matter.
Fruit Slump (I'll use berries for recipe):
2/3'sC buttermilk or yogurt thinned with water
1 1/2tsp baking powder
2tbs sugar (more if needed, but be abstemious, you can always add more after it cooks)
2tbs butter, melted
1/2C - 1C water
sheet of tin foil
1) put fruit in pan with water, add sugar, cinnamon, bring to boil, simmer 10-15 minutes
2) while fruit is cooking, mix dry ingredients
3) add butter
4) add buttermilk/yogurt and mix until it's wetter than a biscuit mix, but not as loose as a stiff batter
5) spoon on top of berries in pot, cover tightly with tin foil, then top with a plate or pot top, turn to lowest heat and allow to steam 15 minutes. You'll want to leave about 1/4 of the top of the pot free for the pudding to rise.
Serve warm (if you can wait that long) with cream or ice cream.
